Vigne Alte
A quiet elegance moves through the woods of Podere Cavàga: the deer, sovereign of the high ground.
We could choose no truer symbol for our Franconia Vigne Alte. This wine is born where the land grows steep and the air grows thinner: 500 metres above sea level, in our own vineyards at Foresto Sparso.
Here, Franconia finds its natural balance. A resilient grape that withstands harsher climates, it produces impressive pyramid-shaped bunches and deep purple berries — the very soul of this wine.
Just as a deer moves proudly between rocks and clearings, this Franconia brings together structure and grace, with a bold yet surprisingly elegant palate.
The dark label recalls the brown woodland soil, the shade of the trees and the unhurried rhythm of nature that governs these vineyards.
Franconia Vigne Alte. The soul of the forest, in a sip.
The Cavàga method
The grapes are harvested and selected by hand, choosing only the finest bunches.
After gentle destemming, the grapes undergo extended maceration for several weeks to extract colour, aromas and structure from the skins. Frequent pumping over accompanies the start of fermentation and helps the wine develop depth and elegance.
Once fermentation is complete, the wine is drawn off and the grape solids pressed. A period of ageing in stainless steel follows, with natural settling and racking to remove fermentation residues.
Vigne Alte
Then time takes centre stage.
The wine rests for at least four years in French oak barrels, where malolactic fermentation also takes place, developing complexity and roundness. It then ages for at least one further year in bottles laid down in the silence of Podere Cavàga's cellar, beneath the mountain.
