The traditional Cavàga Method requires that the roots and natural extracts macerate in
A hydroalcoholic base composed of wheat alcohol and water from our own spring. Once the extraction and decantation cycle is complete, the ingredients are manually mixed, concluding the refinement in a tank before bottling. Artemisia absinthium, or Greater Wormwood, is a medicinal herbaceous plant. Its name comes from the Greek "artemes," meaning "healthy," alluding to its medicinal properties, already known in ancient times even before the Romans, from whom we learned the refinement method. The raw materials that make up the recipe are all organically grown, and the reduction takes place in small barrels in the laboratory. Our Cardinal Bitter is a pure, unique, and versatile product, free from preservatives, colorings, or artificial flavors. On its own, it's a delicate digestif; with ice and orange peel, it transforms into an excellent aperitif; and when mixed, it's a perfect bitter for cocktails.
