Dharma: the essence of pure Merlot. Cavàga's Merlot showcases the distinctive character of this noble Bordeaux grape, which has been present on the estate since the early 19th century in the sunniest and warmest areas around 400 meters above sea level. It is a soft and rounded red wine born from the estate's clayey, mineral-rich soils. It is the delightful expression of the Cavàga Method, characterized by the freshness of the forest, the aromas of the underbrush, and a fruity flavor with excellent savoriness and freshness. Harvesting is done by hand in wooden crates, and the grapes are fermented in temperature-controlled steel vats with maceration on the skins. Maturation takes place in French oak barrels and the wine is bottled under the watchful eye of our winemaker Fabio Bigolin. Pleasantness and immediacy on the palate are hallmarks of the Cavàga Method for this Bordeaux varietal, with a ruby red color and aromas of small dark berries. On the palate it has a good body, rich and mature with a fine and elegant tannic texture.
